What temp?
About 55 F (13 C) for aging, steady. Fluctuation ruins wine faster than the wrong steady temp. Keep it dark and still.
Preservation pump worth it?
For an open bottle you finish in 3 to 5 days, yes — it pulls the oxygen out so the wine lasts the week. For longer, finish it or cook with it.
Age-worthy wines?
Bordeaux, Barolo, high-end Napa Cab, vintage Port — structured reds with tannin and acid. Most everyday wine is made to drink now, and aging it just flattens it.
