Craft cocktails are measured — the 2:1:1 sour (spirit, sour, sweet), the stir-not-shake, the clear ice. A Boston shaker (tin-on-tin), a double jigger (1 oz / 2 oz), a Hawthorne and a bar spoon, a mixing glass for the stirred drinks, and a set of proper glassware. Measure every pour, and the drink is repeatable and balanced; free-pour and it is a guess.

Shaken or stirred?

Shake drinks with juice or dairy (sours, daiquiris, margaritas) — the aeration chills, dilutes, and integrates cloudy ingredients. Stir spirit-forward drinks (martinis, Manhattans, negronis) — stirring chills and dilutes without the aeration, keeping the drink silky and clear. The rule: if it has juice, shake it; if it is all booze, stir it.

Why a Boston shaker?

A tin-on-glass or tin-on-tin Boston shaker seals and breaks cleanly, holds more, and chills faster than the three-piece cobbler shaker with its built-in strainer. The pros use the Boston for a reason. The cobbler is fine for a home beginner; the Boston is the upgrade that lasts a career.

Why a jigger (not free-pour)?

Balance in a cocktail is a ratio — the 2:1:1 sour works because the spirit is twice the sour and the sweet. Free-pouring "to taste" breaks the ratio and the balance; a jigger measures it exactly, every time. The repeatable, balanced cocktail is the jiggered cocktail. Measure every pour — it is not slower, it is better.

Why clear ice?

Cloudy ice (from trapped air and minerals) melts fast and dilutes the drink; clear ice (made by directional freezing) is denser, melts slower, and looks like the bar's. An insulated cooler in the freezer freezes the water from the top down, pushing the impurities to the bottom — cut the clear block and you have bar ice. The single biggest visual upgrade to a home drink.
