Pellet, offset, or kamado?
Pellet for set-and-forget consistency; offset for the romantic (and demanding) fire-tending ritual; kamado for fuel efficiency and high-heat versatility. Pellet is the easiest path to good brisket.
4-probe thermometer — overkill?
For one brisket, maybe. For a brisket plus a pork butt plus a yardbird, no — you monitor every cut from your phone without lifting the lid and losing the cook.
Wrap or no wrap (the stall)?
Wrap (the "Texas crutch") in butcher paper at around 165 F to push through the stall and keep the bark. Paper (not foil) breathes, so the bark stays.
Why a charcoal chimney if I run pellets?
For when you want a hot, fast charcoal sear (steaks, burgers) without heating the smoker. A chimney lights coals in 15 minutes with no lighter fluid.
