One knife or a block?

One good 8-inch chef's knife and a paring knife. A $90 chef's knife outperforms a $90 block of ten. Buy two great knives, not ten mediocre ones.

Cast iron or non-stick?

Both, for different jobs. Cast iron for searing and oven work; a tri-ply or non-stick for eggs and delicate fish. They are not competitors.

Why does the cutting board matter?

A heavy edge-grain wood board protects your knife's edge and does not slide. Plastic dulls edges; glass shatters them. Wood is the only right answer.

Is a kitchen scale worth it?

For baking and consistency, yes. Volume is sloppy — 120 g of flour is always 120 g, but one cup varies by how you scoop.
