Machine or grinder first?
Grinder. A great grinder on a cheap machine beats a cheap grinder on a great machine. Burr grind consistency is what makes espresso repeatable.
Do I really need a 0.1g scale?
Yes. Espresso is a recipe — dose in, yield out, time. You cannot dial in what you cannot measure.
Fresh beans — how fresh?
7 to 30 days off roast is the sweet spot. Too fresh and it tastes sour and runs fast; stale and it is flat and blondes instantly.
How long to dial in?
Expect a week and a kilo of beans to get a milk drink dialed, longer for straight shots. Start a notebook on day one.
